LA Seafood Competition Saturday May 29th 2010  

 

Keep an eye out for Chef at the LA seafood competition this May!!!

Chef is an avid supporter of the Seafood industry and promoting

both local and sustainable seafood andagriculture where ever he is.

Chef grew up with a love and respect of fishing and it remains

a passion of his to this day. Come out and support Chef in the superdome

this May. Dates will follow. This was from Chef Matt's retaurant work at 353 Bistro in NY. 

 

Welcome Spring!!!

Welcome Spring. Wild Ramp wrapped Monk Fish poached in

Court Boullion, with pickled ramp ends and a limoncello citrus

sauce, sweet potato polenta and butter pached Asparagus.

This is one of my dishes from back in NYC. It was a spring inspired

dish with the ramps being taken from the local park. I am a huge

fan of Monk fish and find it is very under utilized. It is truly the

poor mans lobster.
