    Welcome Spring!!!

    Welcome Spring. Wild Ramp wrapped Monk Fish poached in

    Court Boullion, with pickled ramp ends and a limoncello citrus

    sauce, sweet potato polenta and butter pached Asparagus.

    This is one of my dishes from back in NYC. It was a spring inspired

    dish with the ramps being taken from the local park. I am a huge

    fan of Monk fish and find it is very under utilized. It is truly the

    poor mans lobster.
